I swear my husband brings out the best in me. I haven’t cooked like this in years! Last night’s dinner was nothing short of fucking amazing.
Here’s what was on the menu:
- Fried cod
- Veggie chunks
- Fried plantain
- Coconut peas and rice
- Corn on the cob
- Biscuits
The cod was seasoned to taste, dipped in an egg wash, coated in Panko crumbs, dipped and coated again. After double breading, let stand for 10 minutes, then, fry in a shallow pan of olive oil.
Now, veggie chucks are a soy vegetarian product that looks like croutons at a quick glance. They were boiled in water, drained, and then placed into a large saucepan where curry, olive oil, onions, green peppers, garlic, shallots, hot pepper, and salt were prepared and waiting. The mixture is stirred and simmered.
The plantains were, simply, cut and fried in a shallow pan of olive oil.
The coconut peas and rice is super easy if you use my Americanized recipe versus my grandmother’s 3 -day recipe. Combine water, coconut milk, salt, sugar, and kidney beans (canned, drained) in a sauce pan. Bring to a slight boil, then, add a 5-minute rice. Cover, set flame to low, and let steam.
The corn was boiled in a large saucepan with a few cloves are garlic, thyme, hot pepper, and a little salt.
The biscuits were Grands.
Yeah, we were too lazy to make those from scratch.
