Last night, my husband took the night off and let me handle dinner all by myself! We went to Whole Foods and picked up some of the freshest salmon I’ve seen in a while and a few items to make our meal:

Broiled Salmon with Pepper, Garlic, & Onion Medley, and Black Beans & Rice

  • Season salmon steaks to taste, drizzle with olive oil, then, place a pat of butter on each. Place in the broiler, top rack.
  • Chop fresh garlic, green pepper, red pepper, cherry tomatoes, onions, and hot pepper (habenero). Place medley in a frying pan with olive oil and a pat of butter. Cook the water out of it.
  • Boil water in a quart pan, then, add salt, hot pepper, onion, and fresh thyme. Add 5-minute rice, then, a can of black beans. Cover to steam on low heat, stirring often. Again, when it comes to rice and beans, I use the instant stuff since soaking long rain rice and uncooked beans for 24 hours is nowhere in my life plan.
  • Once your salmon is broiled to perfection, plate the fish, topping it with the medley. Garnish with sliced, fresh cherry tomatoes.
  • Plate your rice and add a side salad for roughage.  

This dish was amazingly simple and good. The boys raved about it all night and I’m looking forward to making this again.
