Last night, my husband and made the most amazing dinner and, though most of the dinner was a combination of old favorites, we added a little something that made our spicy dinner –– kinda sweet!
We ate curry coconut fish, coconut black beans and rice, johnny cakes, with sweet potato, served with a side salad and avocado.
CURRY COCONUT FISH
- Heat a half inch of oil in frying pan
- Add curry and allow it to burn
- Add onions, green and red bell peppers, garlic, thyme, hot pepper (habenero)
- Add coconut milk, cover and simmer
- Add seasoned fish to pan (seasoned to taste with salt, garlic, pepper, curry)
- Cover, simmer
COCONUT BLACK BEANS & RICE
- Simmer water and coconut milk in a saucepan
- Add a pinch of salt, sugar, garlic, a twig of thyme, and 1/2 of a hot pepper
- Add one can of black beans, cover and simmer
- Add 5-minute rice, cover, stirring often
We, simply, peeled and boiled a couple sweet potatoes and you can find our johnny cake recipe here. The sweet potatoes were a nice addition to our spicy dish.
It was so good, I ate it for breakfast.
