Now, this is a variation of a recipe you’ve seen before, so I won’t bore you with all the details. What I do want to say is, when you get a chance to season your fish a night or two in advance, before cooking it, please do so.
Season to taste and place inside a plastic storage bag. For extra protection from leaking and air, place the baggie in a sealed container, like Tupperware.
This dish is simple:
- Fried cod
- Coconut black beans and rice
- Side salad
Also, I made a bit of tartar sauce using mayonnaise and relish. Simple!
