Teriyaki curry salmon, coconut peas and rice (made with black beans), sweet potato, and a side salad with blue cheese dressing.
- Season salmon to taste with salt, garlic, pepper, curry, and five spice powder. sprinkle with olive oil and place a pat of butter on each salmon steak. Place in the oven to broil. Remove when cooked to your liking, smother with teriyaki sauce, then, place back into broiler for about 3 minutes. Remove.
- Bring one can of coconut milk and a half can of water to a simmer. Drain beans and add to the milk. Add salt, fresh tyme, sugar, and let simmer. Add rice and steam until fully cooked.
- Clean, peel, and cut sweet potatoes. Place in a saucepan of water with a pinch of salt and bring to a boil until potatoes are soft.
